Born in Beeton, Ontario in 1891, Kate (Scott) Aitken was a schoolteacher whose spirit of adventure took her to western Canada. Upon her father’s death, she returned to Beeton to help manage the family’s general store. About a year after she and businessman Henry Mundell Aitken were married in 1914, they purchased a 26-acre farm near their hometown.
On that property near Beeton which they named Sunnybank Farm, they had an approved poultry operation, prize-winning livestock, apple trees, and gardens of vegetables and small fruits.
With their farm’s bountiful crops Kate started a home canning enterprise. She sold Christmas fruitcakes, eggs, chickens, and preserves made to order. This led to preparation and selling of specialty items in hampers to Toronto clients and shops.
